Easy Homemade Chocolate Cheesecake Recipe
Ingredients: (6-inch one)
Cake bottom: Oreo cookies 100g, butter 25 grams
Cake: dark chocolate 80g (I use cocoa butter content of 70%), gelatin-powder 6g, hot water 40g, cream cheese 300 g, light cream 220 grams, oligosaccharides 30g (I replaced with the same amount of maltose).
Surface layer: Dark chocolate 70g, light cream 80g.
Crush Oreo cookies (100g).
Add crushed cookies into melted butter and stir until evenly mixed. Then flatten the mixture in a cake mold, refrigerate until solidification.
Cut cream cheese into small pieces, microwave just until warm and pliable, 50 to 60 seconds.
Stir cream cheese with a whisk until smooth.
Oligosaccharide or maltose heated to a flowing state. Melt gelatin-powder into hot water (40g, add according to the melt situation).
Mix flowing oligosaccharide and gelatin water into the cream cheese that made by step2.
Melt those chocolate (80g), add it into the mixture made by step 3. Stir until evenly mixed
Stir light cream (220 grams) for 7 or 8 minutes
Mix the light cream with the mixture made by step 4. Stir until evenly mixed
Here we get cake mixture; you can add some sugar according to your taste.
Pour cake mixture into the mold in step1, refrigerate until cool, about 30 minutes.
Make surface layer: light cream (80g) heated to a boil, add dark chocolate (70g) and stir until melted.
When the mixture is about 36 to 40 degree (not hot touched by hand), pour it on the surface of the cake from refrigerator. Does not need to level, it will naturally become smooth.
Refrigerate the cake for more about 4 hours.
